Each distillate represents a world in itself, for all the ingredients in each recipe, the aroma, flavors, and history. Whiskey, as well as gin, is born from the distillation of various cereals. Rum, on the other hand, is made by distilling sugarcane. Cognac and Armagnac are born from the distillation of wine, and Grappa is produced from pomace. Calvados is made from distilling apple or pear cider. Vodka is obtained from the distillation of potatoes and cereals.

In a few words, distillation is a technique used to separate two or more substances present in a mixture. There are two distillation methods: discontinuous and continuous. Discontinuous distillation occurs in alembics, almost always made of copper, with internal (indirect) heating. Due to the effect of vaporization, this type of alembic extracts alcohol. The shape of alembic varies according to the distillate's characteristics and to the tradition. The distillate obtained by single, double, or triple discontinuous distillation reaches 60/80 % alcohol by volume (ABV). Each time the process is completed, it’s necessary to empty the liquid left in the alembic, clean each equipment, and start over. Continuous distillation is based on the use of large column alembic stills that vary from 8 to 20 meters in height. They operate in an infinite cycle, as the raw material that has to be distilled flows without interruption. The difference between Cognac and Armagnac, therefore, stands also in the use of alembic stills, discontinuous for Cognac and continuous for Armagnac.
